Ingredients

1 box yellow or vanilla cake mix (plus ingredients listed on the box: eggs, oil, water)

1 can (20 oz) crushed pineapple (with juice)

1/2 cup granulated sugar

1/2 cup packed light brown sugar

2 tbsp unsalted butter

1 tsp vanilla extract

1 box (3.4 oz) instant vanilla pudding mix (optional for extra richness)

1 cup pineapple juice (from the can or store-bought if more is needed)

Instructions

  1. Preheat oven and bake the cake as instructed on the box using a 9×13 inch dish.
  2. Let the cake cool for about 10 minutes, then poke holes all over the top using the handle of a wooden spoon.
  3. In a saucepan, combine crushed pineapple with juice, both sugars, and butter. Bring to a gentle boil and simmer for 3–5 minutes.
  4. Remove glaze from heat and stir in vanilla extract.
  5. Slowly pour the glaze over the cake, making sure it fills the holes and covers the surface evenly.
  6. Allow the cake to cool to room temperature, then refrigerate for at least 2 hours before serving.
