Ingredients
1 ½ pounds smoked Polish sausage (kielbasa)
3 cups sauerkraut (drained or undrained)
4 yellow potatoes, peeled and sliced
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon caraway seeds (optional)
1 cup chicken broth
2 tablespoons butter
½ teaspoon black pepper
Instructions
1. Slice the kielbasa into thick rounds. In a large skillet or Dutch oven over medium heat, sear the sausage until browned on both sides. Remove and set aside.
2. In the same pan, melt butter and sauté chopped onions until translucent. Add garlic and cook for another 30 seconds.
3. Add sliced potatoes over the onion-garlic mixture. Then add the sauerkraut. Sprinkle with black pepper and caraway seeds if using.
4. Return the browned kielbasa to the pan. Pour chicken broth over all the ingredients.
5. Cover and simmer on low heat for 40–45 minutes or bake in a preheated oven at 375°F for 45 minutes covered with foil.
6. Garnish with fresh parsley if desired and serve hot with mustard or rye bread.
Notes
Rinse the sauerkraut if you prefer a milder flavor.
You can swap chicken broth for beer for added depth.
