Ingredients
0.5 cup mashed Russet potato
0.5 teaspoon vanilla extract
1 pinch salt
6 cups powdered sugar
0.75 cup creamy peanut butter
Instructions
1. Peel and boil 1 small Russet potato until fork-tender. Drain, mash smooth, and cool completely.
2. In a bowl, mix the mashed potato with vanilla and salt. Gradually stir in powdered sugar until a thick, non-sticky dough forms.
3. Dust parchment paper with powdered sugar and roll dough into a 1/4 inch thick rectangle.
4. Spread an even layer of peanut butter over the dough, leaving a small edge clear.
5. Roll dough into a log using the parchment to guide. Wrap and chill for 1 hour.
6. Slice into 1/2 inch pieces. Serve chilled or at room temp. Dust with extra powdered sugar if desired.
Notes
Be sure the mashed potato is completely cool before mixing with sugar to prevent melting.
You can substitute almond butter, Nutella, or cookie butter for the filling.
