For the Pumpkin Bread:

1¾ cups all-purpose flour

1 tsp baking soda

½ tsp baking powder

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

¼ tsp ground cloves

1 cup canned pumpkin puree

½ cup granulated sugar

½ cup brown sugar

½ cup vegetable oil

2 large eggs

1 tsp vanilla extract

For the Maple Cream Cheese Filling:

8 oz cream cheese, softened

¼ cup pure maple syrup

1 tbsp granulated sugar

1 large egg

½ tsp vanilla extract

Optional Topping:

Walnut halves

Maple glaze (powdered sugar + maple syrup)


Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan.
  2. In a bowl, whisk flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, mix pumpkin puree, sugars, oil, eggs, and vanilla until smooth.
  4. Combine wet and dry ingredients. Do not overmix.
  5. In a separate bowl, beat cream cheese, maple syrup, sugar, egg, and vanilla until smooth.
  6. Pour half the pumpkin batter into the pan. Add cream cheese layer, then top with remaining batter.
  7. Bake for 55–65 minutes. Toothpick should come out clean.
  8. Cool in pan for 10–15 minutes, then move to a wire rack.
  9. Top with walnuts and drizzle glaze if desired.
