Ingredients
1 package ladyfingers (Savoiardi)
1 cup espresso or strong brewed coffee, cooled
1 cup pumpkin puree
8 oz mascarpone cheese
1 cup heavy whipping cream
1/2 cup powdered sugar
1 1/2 teaspoons pumpkin pie spice
1 teaspoon vanilla extract
2 tablespoons unsweetened cocoa powder (for dusting)
Instructions
1. Brew a cup of espresso or strong coffee and let it cool.
2. In a large bowl, mix together mascarpone, pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract until smooth.
