Ingredients

1 cup pumpkin puree

2 1/2 cups all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon ground clove

1/2 cup unsalted butter, softened

3/4 cup granulated sugar

1/2 cup brown sugar

1 large egg yolk

2 teaspoons vanilla extract

4 ounces cream cheese, softened

1/4 cup unsalted butter, softened (for frosting)

2 cups powdered sugar (for frosting)

1/2 teaspoon vanilla extract (for frosting)

cinnamon for sprinkling

Instructions

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

2. In a bowl, cream butter, granulated sugar, and brown sugar until fluffy.

3. Mix in pumpkin puree, egg yolk, and vanilla extract.

4. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and clove.

5. Gradually mix dry ingredients into the wet mixture until just combined.

6. Scoop dough onto baking sheets and bake for 10–12 minutes.

7. Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack.

8. For the frosting, beat cream cheese and butter until smooth.

9. Add powdered sugar and vanilla, and beat until fluffy.

10. Frost the cooled cookies and sprinkle with cinnamon.

Notes

For extra depth of flavor, chill the dough for 30 minutes before baking, though it’s not required.

Don’t overbake—pull them out when the centers are still slightly soft for the best texture.
