Ingredients

200g spaghetti or linguine

1 cup ricotta cheese

2 cups fresh baby spinach

1 tablespoon lemon zest

2 tablespoons lemon juice

2 garlic cloves, minced

1 tablespoon olive oil

1/4 cup grated parmesan cheese

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Bring a pot of salted water to boil. Cook pasta until al dente. Reserve 1/2 cup pasta water and drain.

2. In a pan, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.

3. In a large bowl, whisk ricotta, lemon zest, lemon juice, salt, pepper, and 1/4 cup pasta water until creamy.

4. Add hot drained pasta and spinach into the ricotta mixture. Toss to combine and wilt the spinach.

5. Stir in parmesan cheese. Add extra pasta water if needed to loosen the sauce.

6. Serve hot with extra lemon zest and cracked pepper if desired.

Notes

Use whole wheat or gluten-free pasta to fit dietary needs.
