Ingredients
1 pint fresh shucked oysters (with liquor)
4 tablespoons unsalted butter
1 small onion, finely chopped
1 stalk celery, finely chopped
2 cloves garlic, minced
2 cups whole milk
1 cup heavy cream
1/2 teaspoon salt (or to taste)
1/4 teaspoon ground black pepper
1/8 teaspoon cayenne pepper (optional)
1 tablespoon fresh parsley, chopped
Oyster crackers or toasted bread, for serving
Instructions
- In a large saucepan, melt butter over medium heat.
- Add chopped onion and celery. Sauté until soft and translucent (5–6 minutes).
- Stir in garlic and cook for another minute.
- Pour in whole milk and heavy cream. Heat slowly, avoiding boiling.
