Ingredients

1 pint fresh shucked oysters (with liquor)

4 tablespoons unsalted butter

1 small onion, finely chopped

1 stalk celery, finely chopped

2 cloves garlic, minced

2 cups whole milk

1 cup heavy cream

1/2 teaspoon salt (or to taste)

1/4 teaspoon ground black pepper

1/8 teaspoon cayenne pepper (optional)

1 tablespoon fresh parsley, chopped

Oyster crackers or toasted bread, for serving


Instructions

  1. In a large saucepan, melt butter over medium heat.
  2. Add chopped onion and celery. Sauté until soft and translucent (5–6 minutes).
  3. Stir in garlic and cook for another minute.
  4. Pour in whole milk and heavy cream. Heat slowly, avoiding boiling.
  5. Add oysters and their liquor. Cook for 3–4 minutes until oysters’ edges curl.
  6. Season with salt, pepper, and cayenne (if using). Taste and adjust.
  7. Stir in chopped parsley.
  8. Serve hot with crackers or toasted bread.
