Ingredients
1 lb chicken breast, cubed
2 cups broccoli florets
1 cup sliced carrots
3 cloves garlic, minced
1/4 cup soy sauce
1/4 cup honey
2 teaspoons cornstarch
1/4 cup water
1 tablespoon olive oil
1 teaspoon sesame oil (optional)
1 teaspoon sesame seeds (optional)
Salt and pepper to taste
Instructions
1. Heat olive oil in a skillet over medium-high heat. Add cubed chicken, season with salt and pepper, and cook until golden and cooked through. Remove and set aside.
2. In the same pan, add more oil if needed, then stir-fry broccoli and carrots for 4–5 minutes until just tender.
3. In a small bowl, whisk together honey, soy sauce, garlic, cornstarch, and water.
4. Return chicken to the pan, pour sauce over everything, and toss to coat. Stir continuously for 2–3 minutes until the sauce thickens.
5. Drizzle with sesame oil and sprinkle with sesame seeds. Serve hot over rice or noodles.
Notes
You can use frozen veggies in a pinch, just thaw and dry them first.
Add red bell pepper or snap peas for extra crunch and color.
