Ingredients
1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 can (28 ounces) crushed tomatoes
6 cups vegetable broth
1 cup brown or green lentils, rinsed
1 tablespoon Italian seasoning
1/4 teaspoon red pepper flakes
1 teaspoon salt
1/2 teaspoon black pepper
8 lasagna noodles, broken into pieces
3 cups fresh spinach
3/4 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh basil or parsley
Instructions
1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 4 to 5 minutes until softened.
2. Stir in the garlic and tomato paste, and cook for 1 minute until fragrant and slightly deepened in color.
3. Pour in the crushed tomatoes and vegetable broth. Add the lentils, Italian seasoning, red pepper flakes, salt, and black pepper. Stir well.
4. Bring the soup to a gentle boil, then reduce the heat and simmer for 20 to 25 minutes, or until the lentils are nearly tender.
5. Add the broken lasagna noodles and continue cooking for 10 to 12 minutes, stirring occasionally, until the noodles are tender.
6. Stir in the spinach and cook for 2 minutes until wilted.
7. Ladle the soup into bowls and top each serving with ricotta, mozzarella, and Parmesan.
8. Finish with fresh basil or parsley and serve hot.
Notes
Do not overcook the noodles, because they will keep absorbing broth as the soup sits and can become too soft.
