1/2 cup light brown sugar

2 large eggs

2 teaspoons vanilla extract

1 tablespoon red food coloring

1/4 cup granulated sugar, for rolling

3/4 cup powdered sugar, for rolling


Instructions

1. Preheat the oven to 350°F and line 2 baking sheets with parchment paper.

2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.

3. In a large bowl, beat the softened butter, 3/4 cup granulated sugar, and brown sugar until light and fluffy.

4. Beat in the eggs one at a time, then mix in the vanilla extract and red food coloring until fully combined.

5. Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.

6. Cover the dough and chill for 30 to 45 minutes.

7. Scoop the dough into 1 tablespoon portions and roll each into a ball.

8. Roll each dough ball first in the extra granulated sugar, then generously in powdered sugar.

9. Place the coated dough balls on the prepared baking sheets about 2 inches apart.

10. Bake for 10 to 12 minutes, until the tops are crinkled and the centers still look slightly soft.

11. Let the cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes
