Ingredients
3 pounds sweet potatoes
1/2 cup brown sugar
1/2 cup unsalted butter, melted
2 large eggs
1/4 cup milk
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 cups mini marshmallows
1/2 cup chopped pecans
Instructions
1. Preheat oven to 400°F. Pierce sweet potatoes and roast on a baking sheet for 45–60 minutes or until fork-tender.
2. Once cool, peel and mash the sweet potatoes in a large bowl.
3. Mix in brown sugar, melted butter, eggs, milk, vanilla, cinnamon, and nutmeg until smooth and fluffy.
