Ingredients

1 lb rigatoni pasta

2 tablespoons olive oil

1 small onion, finely chopped

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1 lb ground beef (or a beef/pork mixture)

1 cup dry red wine

1 can (28 oz) crushed tomatoes

2 tablespoons tomato paste

1 cup beef broth

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and black pepper to taste

1/2 cup whole milk

Fresh parsley, chopped (for garnish)

Freshly grated Parmesan cheese (for serving)

Fresh basil leaves (optional for garnish)


Instructions

  1. Dice the onion, carrots, celery, and mince the garlic.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Sauté until soft.
  3. Stir in minced garlic and cook for another minute.
  4. Add ground beef, cook until browned, and drain excess fat.
  5. Pour in red wine, scraping up brown bits. Simmer until reduced by half.
  6. Stir in tomato paste. Add crushed tomatoes, beef broth, oregano, basil, salt, and pepper.
  7. Simmer the sauce on low, partially covered, for 45 minutes to 1 hour, stirring occasionally.
  8. Bring a large pot of salted water to a boil. Cook rigatoni until al dente.
  9. Drain pasta, reserving 1/2 cup of pasta water.
  10. Stir milk into the sauce, simmer for another 5 minutes.
  11. Toss pasta with the sauce, adding reserved pasta water if needed.
  12. Garnish with parsley, basil leaves, and Parmesan before serving.
