Ingredients
2 slices sourdough bread
3 ounces brie cheese, sliced
1/2 apple, thinly sliced (Honeycrisp or Pink Lady)
1 tablespoon fig spread
2 tablespoons chopped pecans
1 tablespoon butter, softened
Instructions
1. Preheat oven to 375°F and roast thinly sliced apples on a baking sheet for 10 minutes until slightly tender.
2. Spread fig jam on one side of each slice of bread.
3. Layer brie slices, roasted apple slices, and chopped pecans on one bread slice.
4. Top with the second slice of bread, fig side facing in.
5. Butter the outside of the sandwich.
6. Grill on a panini press or skillet over medium heat for 3–4 minutes per side until golden brown and cheese is melted.
7. Slice and serve hot.
Notes
Roast the apples ahead of time to save prep during busy lunch hours.
Use a cast-iron skillet if you don’t have a panini press—it works just as well with a spatula press.
