Ingredients
2 medium sweet potatoes
2 tablespoons olive oil
2 tablespoons honey
1/3 cup crumbled feta cheese
1 tablespoon chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Peel the sweet potatoes and cut them into 1/2-inch thick rounds.
3. Place the rounds on the prepared sheet and drizzle with olive oil. Season with salt and pepper.
4. Flip the rounds to coat both sides evenly in oil and seasoning.
5. Roast for 20 minutes, then flip the rounds and roast for an additional 15–20 minutes until tender and caramelized.
6. Remove from oven and immediately drizzle with honey.
7. Top with crumbled feta and chopped parsley.
8. Serve warm as a side dish or light vegetarian main.
Notes
