Description

Looking for a quick dinner idea that’s healthy, cozy, and loaded with flavor? This Rotisserie Chicken Pho brings together the comfort of homemade soup with the speed of a 30-minute recipe. Using shredded rotisserie chicken and aromatic spices like ginger and star anise, this broth is rich and soul-warming without the hours of simmering. It’s one of the easiest dinner ideas for busy nights, and it’s gluten-free, satisfying, and endlessly customizable. Whether you’re craving healthy soup recipes or easy comfort food, this pho hits the spot.

Ingredients

4 cups chicken broth

1 rotisserie chicken, shredded

6 oz rice noodles

1 inch fresh ginger, sliced

3 garlic cloves, smashed

2 whole star anise

3 whole cloves

1 tablespoon fish sauce

2 green onions, sliced

1/4 cup cilantro leaves

1/4 cup Thai basil leaves

1 lime, cut into wedges

1 tablespoon chili garlic oil (optional)

Instructions

1. In a large pot, combine chicken broth, ginger, garlic, star anise, and cloves. Simmer for 15 minutes.

2. Meanwhile, cook rice noodles according to package directions. Drain and set aside.

3. Shred rotisserie chicken into bite-sized pieces.

4. Strain the broth to remove solids, then return to the pot. Stir in fish sauce.

5. In serving bowls, add cooked noodles and shredded chicken. Pour hot broth over the top.

6. Garnish with green onions, cilantro, Thai basil, lime wedges, and chili garlic oil if desired. Serve hot.

Notes

Keep the noodles and broth stored separately to avoid sogginess when storing leftovers.

Customize with extra toppings like bean sprouts, jalapeño slices, or hoisin sauce for extra flavor.
