Ingredients
1 cup warm milk
2 1/4 teaspoons active dry yeast
1/4 cup molasses
2 tablespoons brown sugar
1/4 cup unsalted butter, melted
1 large egg
1 teaspoon salt
1/2 cup old fashioned oats, plus 2 tablespoons for topping
3 1/2 to 4 cups all purpose flour
1 egg, beaten, for egg wash
Instructions
1. Warm the milk until it is just warm to the touch, then stir in the yeast and 1 tablespoon of the brown sugar. Let it sit for 5 to 10 minutes until foamy.
2. In a large mixing bowl, whisk together the molasses, melted butter, egg, remaining brown sugar, and salt.
3. Stir the yeast mixture into the bowl, then mix in the oats.
4. Add the flour gradually, stirring until a soft dough forms.
5. Knead the dough for 8 to 10 minutes by hand or 6 to 8 minutes with a mixer until smooth and elastic.
6. Place the dough in a greased bowl, cover, and let it rise for 1 to 1 1/2 hours or until doubled in size.
7. Punch down the dough and divide it into 15 equal pieces. Shape each piece into a smooth ball.
8. Arrange the dough balls in a parchment-lined 9×13-inch baking dish. Cover and let rise again for 30 to 45 minutes until puffy.
9. Brush the tops with beaten egg and sprinkle with the extra oats.
10. Bake at 375°F for 20 to 24 minutes until the tops are deeply golden brown.
11. Let the rolls cool for 10 minutes, then serve warm with butter if desired.
Notes
Do not add too much flour while mixing or kneading, because a slightly tacky dough is what keeps these rolls soft and fluffy instead of dense.
