1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground cloves

1/4 teaspoon ground nutmeg

1/2 cup molasses

1/2 cup brown sugar

2 large eggs

1/3 cup vegetable oil

1/2 cup hot water

1/2 cup chopped dates or raisins (optional)


Instructions

1. Preheat oven to 350°F (175°C). Line or grease a muffin tin.

2. In a large bowl, whisk together flour, baking soda, salt, and spices.

3. In a separate bowl, whisk together molasses, brown sugar, eggs, and oil. Stir in hot water.

4. Combine wet and dry ingredients just until mixed. Fold in dates or raisins if using.

5. Spoon batter into muffin cups, filling 3/4 full.

6. Bake for 20–22 minutes, or until a toothpick comes out clean.

7. Cool in the tin for 5 minutes, then transfer to a wire rack.

Notes

You can replace raisins with chopped dates or skip them entirely for a smoother texture.
