Ingredients

1 pound breakfast sausage

3 cups shredded hashbrowns, thawed

1 ½ cups shredded cheddar cheese

4 large eggs

¼ cup milk

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons chopped parsley (optional)


Instructions

1. Preheat your oven to 375°F and grease a muffin tin or use silicone liners.

2. In a skillet over medium heat, cook sausage until browned and crumbled. Drain excess grease and let cool.

3. In a large bowl, combine hashbrowns, cheddar cheese, sausage, eggs, milk, salt, and pepper. Stir until fully mixed.

4. Spoon the mixture into each muffin cup, pressing down slightly. Fill each nearly to the top.

5. Bake for 25–30 minutes, or until the tops are golden and edges are crispy.

6. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

7. Serve warm or store for later.

Notes

Be sure to squeeze excess moisture from hashbrowns for crispier bites.

These reheat best in the oven or air fryer to maintain their texture.
