Ingredients

1 pound Italian sausage

1 tablespoon olive oil

1 small yellow onion, diced

3 cloves garlic, minced

6 cups chicken broth

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes

1 bunch kale, stems removed and leaves chopped

20 ounces refrigerated cheese tortellini

1 cup heavy cream

3/4 cup grated Parmesan cheese

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped


Instructions

1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the Italian sausage and cook until browned, breaking it into crumbles as it cooks.

2. Add the diced onion and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for 30 seconds.

3. Pour in the chicken broth, then stir in the Italian seasoning and red pepper flakes. Bring the soup to a gentle simmer.

4. Add the chopped kale and cook for 3 to 4 minutes until wilted and tender.

5. Stir in the cheese tortellini and cook according to package directions, usually 4 to 5 minutes.

6. Reduce the heat to low and pour in the heavy cream. Stir in the Parmesan cheese until melted.

7. Season with salt and black pepper, then taste and adjust if needed.

8. Ladle into bowls and top with fresh parsley before serving.

Notes

Do not boil the soup after adding the cream, or the broth can separate and the tortellini may become too soft.
