Ingredients

12 oz linguine pasta

2 large chicken breasts

1 tbsp Cajun seasoning

1 tbsp olive oil

2 tbsp butter

4 cloves garlic minced

1 ½ cups heavy cream

1 cup Parmesan cheese freshly grated

½ tsp salt

¼ tsp black pepper

2 tbsp fresh parsley chopped


Instructions

1. Bring a large pot of salted water to a boil. Cook linguine until al dente. Reserve ½ cup of pasta water and drain the rest.

2. Rub Cajun seasoning over the chicken breasts. Heat olive oil in a skillet and cook chicken for 5–6 minutes on each side until golden and cooked through. Remove, rest, then slice.

3. In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.

4. Pour in heavy cream and simmer until slightly thickened.

5. Stir in Parmesan cheese and whisk until smooth. Add salt and pepper. If too thick, add pasta water a little at a time.

6. Toss cooked linguine in the sauce until fully coated.

7. Serve with sliced Cajun chicken on top. Garnish with fresh parsley and extra Parmesan.

Notes

Use freshly grated Parmesan for the smoothest, richest sauce.

To reduce heat, use a mild Cajun blend or reduce the seasoning amount slightly.
