Ingredients
1 pound ground beef
1 small yellow onion, diced
1 green bell pepper, diced
2 cloves garlic, minced
1 tablespoon taco seasoning
1 cup tomato sauce or thick salsa
1 can black beans, drained and rinsed
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
8 large flour tortillas
2 tablespoons melted butter or olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped green onions or cilantro
Instructions
1. Preheat the oven to 425°F and lightly grease a sheet pan.
2. In a large skillet over medium heat, cook the ground beef, onion, and green bell pepper until the beef is browned and the vegetables are softened.
3. Stir in the garlic and cook for 30 seconds.
4. Add the taco seasoning, tomato sauce or salsa, black beans, salt, and black pepper. Simmer for 3 to 5 minutes until the filling thickens slightly.
5. Arrange tortillas around the sheet pan so they cover the bottom and hang over the edges. Place one tortilla in the center if needed to fully cover the base.
6. Sprinkle 1 cup cheddar cheese and 1 cup Monterey Jack cheese over the tortillas.
7. Spread the beef mixture evenly over the cheese layer.
8. Top with the remaining cheddar and Monterey Jack cheese.
9. Fold the overhanging tortillas over the filling, then place another tortilla on top if needed to cover any open space.
10. Brush the top with melted butter or olive oil.
11. Bake for 15 to 20 minutes until golden brown and crisp.
12. Let rest for 5 minutes, then slice into squares and garnish with green onions or cilantro before serving.
Notes
Do not leave the filling too wet, or the tortillas can turn soft instead of crisp, so let the meat mixture simmer until thickened before assembling.
