Ingredients
1 medium zucchini
1 medium yellow squash
1 medium eggplant
1.5 cups cherry tomatoes
1 small red onion
1 bell pepper
3 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon dried oregano
0.5 teaspoon salt
0.5 teaspoon black pepper
6 oz smoked sausage (optional)
Fresh parsley or basil for garnish
Instructions
1. Preheat oven to 425°F (220°C).
2. Slice zucchini, yellow squash, and eggplant into 1/4-inch rounds or half-moons. Halve the cherry tomatoes and slice the red onion and bell pepper.
3. If using, slice the smoked sausage into 1-inch pieces.
4. Spread all ingredients on a large sheet pan.
5. Drizzle with olive oil, sprinkle garlic, dried herbs, salt, and pepper. Toss everything gently to coat.
6. Roast in the oven for 30-35 minutes, stirring once halfway through, until vegetables are tender and edges are slightly crisp.
