Ingredients

400g smoked sausage, sliced

2 medium zucchini, chopped

2 medium yellow squash, chopped

1 large red bell pepper, chopped

2 large carrots, peeled and sliced

400g baby potatoes, halved

2 tablespoons olive oil

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.

2. Chop all vegetables and slice sausage into coins.

3. In a large bowl, combine sausage and vegetables. Drizzle with olive oil and season with Italian seasoning, salt, and pepper. Toss to coat.
