Ingredients
2 medium zucchini
1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
2 large eggs
1/2 cup sour cream
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Shred the zucchini, sprinkle with salt, and let sit for 10 minutes. Then press out excess water using a clean towel.
2. In a skillet, brown the ground beef with onion and garlic. Cook until no longer pink. Season with salt and pepper.
3. In a bowl, whisk together eggs and sour cream to make the custard mixture.
4. In a greased baking dish, layer zucchini, then meat, cheese, and some egg mixture. Repeat layers and top with remaining cheese.
5. Bake at 375°F (190°C) for 25–30 minutes until bubbly and golden. Let cool for a few minutes before serving.
Notes
Always squeeze out extra moisture from the zucchini to avoid a watery casserole.
You can swap ground beef with ground turkey or chicken for a leaner version.
