Ingredients
8 oz penne pasta
1 lb large shrimp, peeled and deveined
3 tbsp butter, divided
4 cloves garlic, minced
1/3 cup dry white wine
1 tbsp lemon zest
2 tbsp lemon juice
1 cup heavy cream
1/2 cup grated parmesan cheese
1 cup shredded mozzarella cheese
2 tbsp chopped fresh parsley
Salt and black pepper to taste
Instructions
1. Cook pasta in salted water until al dente. Drain and set aside.
2. In a large skillet, melt 1 tbsp butter over medium heat. Sear shrimp 1-2 minutes per side until just pink. Remove from skillet.
3. In the same skillet, add remaining 2 tbsp butter and minced garlic. Sauté for 1 minute until fragrant.
4. Pour in white wine to deglaze the pan. Let simmer for 2 minutes.
5. Stir in lemon juice, zest, and heavy cream. Simmer for 3-4 minutes until slightly thickened.
6. Add cooked pasta and parmesan cheese to the sauce. Toss to coat evenly.
7. Transfer the pasta mixture to a greased 9×13-inch baking dish. Arrange shrimp on top.
8. Sprinkle mozzarella over the top.
9. Bake at 375°F for 15-20 minutes until golden and bubbly.
