Ingredients
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
2 large carrots, diced
2 celery stalks, diced
1 can (14.5 oz) diced tomatoes
6 cups chicken broth
2 cups cooked shredded chicken
1 can (15 oz) chickpeas, drained and rinsed
1 teaspoon dried oregano
Salt and pepper to taste
2 tablespoons chopped fresh parsley
Instructions
1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté until softened, about 5–7 minutes.
2. Stir in diced tomatoes and chicken broth. Add oregano, salt, and pepper. Bring to a gentle boil.
3. Add shredded chicken and chickpeas. Reduce heat and simmer for 20–30 minutes.
4. Taste and adjust seasoning as needed. Serve hot, garnished with fresh parsley.
Notes
For added flavor, simmer with a Parmesan rind and remove before serving.
You can substitute chicken thighs for deeper richness or use rotisserie chicken for speed.
