1 lb boneless skinless chicken breast
1 small green cabbage, chopped
1 medium onion, sliced
3 cloves garlic, minced
2 tbsp olive oil
2 tbsp soy sauce
1/4 cup chicken broth
1 tsp paprika
1/2 tsp salt
1/2 tsp black pepper
1 tbsp chopped fresh parsley
Instructions
1. Cut the chicken into bite-sized pieces and chop the cabbage, onion, and garlic.
2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
3. Add the chicken, season with paprika, salt, and black pepper, and cook until lightly golden and nearly cooked through. Remove to a plate.
4. Add the remaining olive oil to the skillet, then cook the onion for 2 to 3 minutes until softened.
5. Stir in the garlic and cook for 30 seconds until fragrant.
6. Add the cabbage and cook for 5 to 7 minutes, stirring often, until tender and slightly caramelized.
7. Return the chicken to the skillet and pour in the soy sauce and chicken broth.
