Ingredients

1 cup uncooked jasmine rice

2 cups water

1 tablespoon olive oil

1 pound ground chicken

3 cloves garlic, minced

1/4 cup soy sauce

1/3 cup buffalo sauce

2 tablespoons honey

2 tablespoons brown sugar

1 tablespoon rice vinegar

1 tablespoon sriracha

2 teaspoons cornstarch

2 tablespoons water

2 green onions, sliced

1 teaspoon sesame seeds


Instructions

1. Add the rice and 2 cups water to a saucepan, bring to a boil, then cover and simmer until tender.

2. Heat the olive oil in a large skillet over medium-high heat.

3. Add the ground chicken and cook, breaking it up, until browned and fully cooked.

4. Stir in the minced garlic and cook for 30 seconds until fragrant.

5. In a small bowl, whisk together the soy sauce, buffalo sauce, honey, brown sugar, rice vinegar, and sriracha.

6. Pour the sauce into the skillet and stir until the chicken is evenly coated.

7. In a separate small bowl, mix the cornstarch with 2 tablespoons water.

8. Stir the cornstarch mixture into the skillet and simmer for 1 to 2 minutes until the sauce thickens and turns glossy.

9. Spoon the cooked rice into bowls and top with the firecracker ground chicken.

10. Finish with sliced green onions and sesame seeds, then serve warm.

Notes

Do not let the sauce boil too hard after adding the cornstarch slurry, or it can thicken too fast and turn sticky instead of smooth.
