Ingredients
4 medium russet potatoes
3 tablespoons olive oil or melted butter
2 cloves garlic, minced (or 1 teaspoon garlic powder)
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup grated Parmesan cheese (optional)
1 tablespoon chopped fresh herbs (parsley, thyme, or rosemary)
Instructions
1. Preheat oven to 425°F (220°C). Scrub and dry potatoes.
2. Place each potato between two wooden spoons or chopsticks. Slice slits about 1/8 inch apart without cutting all the way through.
3. Brush potatoes with olive oil or butter, making sure it seeps between slices.
4. Sprinkle with garlic, salt, and pepper.
5. Place on a parchment-lined baking sheet and bake for 45–60 minutes.
6. Halfway through baking, brush again with more oil or butter.
