Ingredients

1.5 kg beef chuck roast

1 medium onion, diced

4 cloves garlic, minced

2 carrots, peeled and diced

2 stalks celery, diced

2 tablespoons tomato paste

800 g crushed tomatoes

1 cup beef broth

1/2 cup red wine (optional)

2 bay leaves

2 teaspoons Italian seasoning

Salt and pepper to taste

400 g pappardelle pasta

Parmesan cheese for serving


Instructions

1. Season beef with salt and pepper, then sear until browned on all sides in a hot skillet.

2. Sauté onions, garlic, carrots, and celery until soft. Stir in tomato paste and cook until fragrant.

3. Transfer everything to a slow cooker. Add crushed tomatoes, beef broth, red wine (if using), bay leaves, and Italian seasoning. Nestle beef in.

4. Cook on low for 8 hours or high for 4-5 hours until beef is tender.

5. Remove beef, shred it with forks, then return it to the sauce. Stir and simmer for 10-15 minutes.

6. Cook pasta, then serve topped with ragu and freshly grated parmesan.

Notes
