Ingredients
1 pound ground beef
4 cups russet potatoes, diced
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) corn kernels, drained
1 can (15 oz) diced tomatoes, undrained
1 medium yellow onion, chopped
3 cloves garlic, minced
1 cup shredded cheddar cheese
1 cup beef broth
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
1 tablespoon chopped parsley (optional, for garnish)
Instructions
1. Heat a skillet over medium heat, add the ground beef, and cook until browned. Drain the fat.
2. In a slow cooker, layer half the potatoes, beef, beans, corn, tomatoes, onions, and garlic.
3. Repeat with remaining half of ingredients in the same order.
4. Sprinkle in salt, pepper, and paprika evenly.
5. Pour beef broth over everything.
6. Cover and cook on low for 7–8 hours or high for 4–5 hours, until potatoes are fork-tender.
7. Sprinkle cheese on top, cover for 10 minutes until melted.
8. Garnish with parsley if desired and serve hot.
Notes
For extra flavor, try mixing in a can of green chiles or a chopped jalapeño.
If using Yukon Gold potatoes, there’s no need to peel them—just dice and layer!
