Ingredients
3 pounds beef chuck roast
1 tablespoon olive oil
1 large yellow onion thinly sliced
3 cups low sodium beef broth
1/4 cup soy sauce
2 tablespoons Worcestershire sauce
2 tablespoons balsamic vinegar
4 cloves garlic minced
1 teaspoon dried thyme
1 teaspoon dried rosemary crushed
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 bay leaf
8 hoagie rolls split
8 slices provolone cheese
2 tablespoons unsalted butter softened
2 tablespoons fresh parsley chopped
Instructions
1. Pat the beef chuck roast dry with paper towels, then season it all over with kosher salt and black pepper.
2. Heat the olive oil in a large skillet over medium-high heat. Sear the roast for 3–4 minutes per side until nicely browned, then transfer it to the slow cooker.
3. Add the sliced onion to the bottom of the slow cooker around the beef.
4. Pour in the beef broth, soy sauce, Worcestershire sauce, and balsamic vinegar.
5. Stir in the minced garlic, dried thyme, dried rosemary, and add the bay leaf.
6. Cover and cook on LOW for 7–8 hours, or on HIGH for 4–5 hours, until the beef is very tender and shreds easily with two forks.
7. Transfer the roast to a cutting board and shred it, discarding excess fat.
8. Skim fat from the surface of the cooking liquid, then strain the liquid through a fine-mesh sieve into a saucepan or heatproof bowl to make the au jus.
9. Preheat the oven broiler. Place the split hoagie rolls cut side up on a baking sheet and spread the cut sides with softened butter.
10. Broil the rolls for 1–2 minutes until lightly toasted around the edges.
11. Pile warm shredded beef onto each toasted roll and top with a slice of provolone cheese.
12. Return the sandwiches to the broiler for 1–2 minutes, just until the cheese is melted and bubbly.
13. Sprinkle with chopped fresh parsley.
14. Ladle the hot au jus into small bowls or ramekins and serve alongside the sandwiches for dipping.
