Ingredients
2 pounds boneless skinless chicken thighs
3/4 cup low-sodium soy sauce
1/2 cup brown sugar
1/4 cup honey
4 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons rice vinegar
1 tablespoon sesame oil
2 tablespoons cornstarch
2 tablespoons water
1 tablespoon sesame seeds
2 green onions, sliced
3 cups cooked jasmine rice
3 cups steamed broccoli
Instructions
1. Lightly grease the slow cooker insert if needed, then place the chicken thighs in an even layer at the bottom.
2. In a medium bowl, whisk together the soy sauce, brown sugar, honey, minced garlic, grated ginger, rice vinegar, and sesame oil until well combined.
3. Pour the teriyaki sauce over the chicken, making sure all the pieces are coated.
4. Cover and cook on low for 4 to 5 hours or on high for 2 1/2 to 3 hours, until the chicken is fully cooked and tender.
5. Remove the chicken from the slow cooker and shred it with two forks, or slice it into bite-sized pieces if you prefer.
6. In a small bowl, stir together the cornstarch and water until smooth.
7. Pour the cornstarch slurry into the slow cooker and stir it into the sauce.
8. Return the shredded chicken to the slow cooker and stir to coat it well in the thickened sauce.
9. Cover and cook for 15 to 20 minutes more on high, until the sauce is glossy and slightly thickened.
10. Serve the teriyaki chicken over cooked jasmine rice with steamed broccoli on the side.
11. Finish with sesame seeds and sliced green onions before serving.
Notes
Do not add the cornstarch at the beginning of cooking, or the sauce can turn uneven and lose its silky texture instead of thickening properly at the end.
