2 lbs boneless, skinless chicken breasts or thighs
1/2 cup low-sodium soy sauce
1/4 cup honey or brown sugar
1/4 cup rice vinegar
1 tbsp sesame oil
2 cloves garlic, minced
1 tsp fresh grated ginger (or 1/2 tsp ground ginger)
1 tbsp cornstarch
1 tbsp water
2 tbsp sesame seeds (optional, for garnish)
2–3 green onions, chopped (for garnish)

Instructions
- Place the chicken breasts or thighs in the bottom of your slow cooker.
- In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
- Pour the sauce over the chicken, coating evenly.
- Cover and cook on low for 4–5 hours or high for 2.5–3 hours, until chicken is cooked through and tender.
- Remove chicken and shred or slice as preferred.
- Mix cornstarch with water to form a slurry, then stir into the sauce in the slow cooker.
- Return chicken to the slow cooker, stir, and cook on high for 15–20 minutes until sauce thickens.
