3 large green tomatoes, sliced ½-inch thick
½ cup buttermilk (or plant-based milk with lemon juice)
1 cup cornmeal
½ cup all-purpose flour
1 tsp smoked paprika
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper
Vegetable oil (for frying)

1 cup diced ripe tomatoes
¼ cup finely chopped red onion
1 small cucumber, finely diced
1 garlic clove, minced
1 jalapeño, minced

Instructions
