Ingredients

3 cups cooked shredded chicken (rotisserie or poached)

1 cup red enchilada sauce (plus extra for topping)

1 tsp cumin

1 tsp chili powder

1/2 tsp garlic powder

Salt and pepper to taste

1 1/2 cups shredded cheddar cheese

1/2 cup sour cream (plus more for drizzling)

6 large flour tortillas

Fresh chopped cilantro for garnish

Cooking spray or a little oil for the baking dish


Instructions

  1. In a large bowl, mix shredded chicken with 1 cup enchilada sauce, cumin, chili powder, garlic powder, salt, and pepper.
  2. Lay tortillas flat and add a portion of the chicken mixture to the center of each. Sprinkle some cheese over the top.
  3. Roll up each tortilla tightly and place seam-side down in a greased baking dish.
  4. Pour extra enchilada sauce generously over the burritos.
  5. Sprinkle remaining cheese on top.
  6. Cover with foil and bake at 375°F (190°C) for 20 minutes.
  7. Remove foil and bake uncovered for another 10 minutes until cheese is bubbly.
  8. Drizzle sour cream and garnish with chopped cilantro before serving.
