1 lb chicken thighs

1 cup long-grain white rice

1 cup diced red bell pepper

1 cup diced green bell pepper

1 medium onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

2 cups chicken broth

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika

2 tablespoons chopped fresh parsley

2 tablespoons chopped green onions


Instructions

1. Season chicken thighs with salt, pepper, and smoked paprika.

2. In a large skillet, heat olive oil over medium-high heat. Sear chicken until golden and cooked through, about 5–6 minutes per side. Remove and set aside.

3. In the same skillet, sauté onion and bell peppers for 3–4 minutes. Add garlic and cook 1 minute more.

4. Add chicken broth and bring to a simmer. Stir in rice, cover, and reduce heat to low. Cook for 15 minutes until rice is tender.

5. Slice or shred cooked chicken, then stir it back into the rice. Heat through for 2–3 minutes.

6. Garnish with parsley and green onions. Adjust seasoning and serve hot.

Notes

Use leftover rice for an even faster version of this dish.

Add crushed red pepper flakes if you want more heat.
