Ingredients

12 oz spaghetti

1 tbsp olive oil

3 cloves garlic, minced

2 cups fresh spinach leaves

½ cup sun-dried tomatoes (in oil), chopped

1 cup heavy cream

½ cup grated Parmesan cheese

¼ tsp crushed red pepper flakes (optional)

Salt and freshly ground black pepper, to taste

½ tsp Italian seasoning

¼ cup reserved pasta water


Instructions

  1. Bring a pot of salted water to boil and cook spaghetti until al dente. Reserve ¼ cup pasta water. Drain and set aside.
  2. Heat olive oil in a skillet over medium. Add garlic and sauté for 30 seconds.
  3. Add sun-dried tomatoes; cook 1-2 minutes. Add spinach and stir until wilted.
  4. Pour in cream, add Parmesan, seasoning, and red pepper. Stir until smooth and creamy.
  5. Add cooked pasta and reserved water. Toss to combine. Season with salt and pepper.
  6. Serve hot, garnished with extra cheese or pepper if desired.
