Ingredients

3 ripe but firm pears, thinly sliced

1/2 cup brown sugar

1/4 cup unsalted butter (for topping)

1 1/4 cups all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 cup unsalted butter (for batter)

2/3 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup milk

Instructions

1. Grease a 9-inch round cake pan. In a saucepan, melt 1/4 cup butter with brown sugar until bubbly. Pour into the cake pan and arrange pear slices in a circular pattern.

2. In a bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg.

3. In another bowl, cream 1/2 cup butter with granulated sugar until fluffy. Beat in eggs and vanilla extract.

4. Gradually add the dry ingredients to the wet mixture, alternating with milk. Stir until just combined.

5. Spoon the batter over the pears and gently spread it evenly.

6. Bake at 350°F (175°C) for 35–40 minutes or until a toothpick inserted comes out clean.

7. Cool for 10 minutes, then invert the cake onto a serving plate. Serve warm or at room temperature.

Notes

Make sure to use firm pears to retain structure while baking.

Let the cake cool only briefly before flipping to prevent sticking.
