Ingredients

1 lb (450g) large shrimp, peeled and deveined

1 tablespoon coconut oil

1 small onion, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons Thai red curry paste

4 cups (1 liter) chicken or vegetable broth

1 can (13.5 oz / 400ml) full-fat coconut milk

1 tablespoon fish sauce (or soy sauce)

Juice of 1 lime

1 teaspoon brown sugar (optional)

12 red chilies, sliced

Fresh cilantro, chopped

Salt and pepper to taste


Instructions

  1. Heat coconut oil in a large pot over medium heat. Sauté chopped onion for 3–4 minutes until translucent.
  2. Add minced garlic and grated ginger. Stir and cook for another minute.
  3. Mix in red curry paste and stir constantly for 1–2 minutes to release flavor.
  4. Pour in chicken or vegetable broth. Bring to a gentle simmer.
  5. Stir in coconut milk, fish sauce, lime juice, and brown sugar. Season with salt and pepper. Simmer for 5–7 minutes.
  6. Add shrimp and sliced chilies. Cook for 3–4 minutes until shrimp are pink and cooked through.
  7. Remove from heat. Ladle into bowls and garnish with fresh cilantro and extra lime juice if desired.
