Ingredients
300g steak (sirloin or ribeye), cubed
250g rotini pasta
2 tablespoons olive oil
2 tablespoons butter
3 cloves garlic, minced
1 1/2 cups heavy cream
3/4 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
2 tablespoons chopped parsley
Salt and black pepper to taste
Instructions
1. Cut steak into bite-sized cubes and season with salt and pepper.
2. Heat olive oil in a hot skillet and sear steak bites for 2–3 minutes per side until browned. Remove and set aside.
3. Cook rotini pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
4. In the same skillet, melt butter and sauté garlic for 1 minute.
5. Pour in heavy cream and bring to a gentle simmer.
6. Stir in Parmesan and mozzarella until melted and creamy.
7. Add cooked rotini and toss to coat. Add pasta water if needed to loosen the sauce.
8. Plate the pasta, top with steak bites, and garnish with parsley and extra cheese.
Notes
For extra flavor, add sautéed mushrooms or caramelized onions to the sauce.
Swap heavy cream with half-and-half for a lighter version, though it may be less thick.
