Ingredients
4 large russet potatoes
1 lb sirloin or ribeye steak, cut into cubes
2 tablespoons olive oil
2 tablespoons butter (for searing)
3 garlic cloves, minced
1 cup heavy cream
3/4 cup grated parmesan cheese
2 tablespoons butter (for sauce)
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley
Instructions
1. Preheat oven to 400°F. Scrub potatoes, pierce with a fork, rub with oil and salt, then bake for 50–60 minutes until crispy-skinned and fork-tender.
2. Heat olive oil and butter in a skillet. Season steak cubes with salt and pepper. Sear on medium-high heat for 2–3 minutes per side. Set aside.
