Ingredients
1 cup all-purpose flour
1 cup granulated sugar
1 cup brown sugar
1 cup chopped pecans
4 large eggs
1 cup vegetable oil
2 teaspoons vanilla extract
1 teaspoon baking powder
0.5 teaspoon salt
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
2. In a large bowl, whisk together flour, granulated sugar, brown sugar, pecans, baking powder, and salt.
3. Add eggs, vegetable oil, and vanilla extract. Stir until just combined. Do not overmix.
4. Pour the batter into prepared loaf pan and spread evenly.
5. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
6. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
