Ingredients

3 cups carrots, peeled and cut into thick diagonal slices

2 apples, sliced into wedges (Honeycrisp or Fuji recommended)

2 tablespoons maple syrup

1 tablespoon Dijon mustard

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (plus more for garnish)

0.5 teaspoon salt

0.25 teaspoon black pepper


Instructions
