Ingredients
1 pound ground beef
2 tablespoons taco seasoning
1/3 cup water
8 flour tortillas
1 cup refried beans
1/2 cup red enchilada sauce
1 1/2 cups shredded Mexican cheese blend
1/2 cup diced tomatoes
1/4 cup chopped green onions
2 tablespoons vegetable oil (for frying, optional)
Instructions
1. Lightly fry or bake tortillas until crisp and golden. Set aside.
2. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
3. Stir in taco seasoning and water. Simmer until thickened, about 5 minutes.
4. Spread a layer of refried beans over one crisped tortilla. Top with a spoonful of beef mixture.
