Ingredients

1 lb boneless skinless chicken breasts

1 tbsp olive oil

2 tbsp butter

3 cloves garlic, minced

8 oz cremini or button mushrooms, sliced

1 cup chicken broth

1/2 cup heavy cream

1 tbsp chopped parsley (optional)


Instructions

1. Season chicken breasts with salt and pepper.

2. Heat olive oil in a skillet over medium-high heat. Sear the chicken on both sides until golden and cooked through, about 4-5 minutes per side. Remove from skillet.

3. In the same skillet, melt butter. Add mushrooms and sauté until golden, about 5-7 minutes.

5. Sprinkle in flour and stir to coat the mushrooms. Slowly pour in chicken broth while stirring.

6. Add the heavy cream and bring the sauce to a gentle simmer.

7. Return the chicken to the skillet and spoon sauce over the top. Simmer for 5 minutes to let flavors combine.

For added depth, use a mix of mushroom varieties like shiitake and cremini.
