Ingredients

1 pound cheese tortellini

1/2 pound ground sausage or smoked sausage, sliced

1/2 red bell pepper, diced

1/2 yellow bell pepper, diced

2 cloves garlic, minced

2 teaspoons Cajun seasoning

1 cup heavy cream

4 ounces cream cheese

1 cup shredded cheddar cheese

1 tablespoon chopped parsley (optional)

Instructions

1. In a large skillet, brown the sausage over medium-high heat until cooked through. Drain any excess grease.

2. Add chopped bell peppers and minced garlic. Sauté for 3 minutes until softened and fragrant.

3. Pour in the heavy cream and stir in cream cheese. Let it melt completely.

4. Add Cajun seasoning, stir to combine, and simmer for 2-3 minutes.

5. Stir in the cheese tortellini and cover. Cook for 5-7 minutes until pasta is tender.

6. Sprinkle shredded cheddar cheese over the skillet and stir until melted.

7. Taste and adjust seasoning if needed. Garnish with parsley before serving.

Notes

Use fresh refrigerated tortellini for best texture.

If you prefer more heat, increase the Cajun seasoning or add crushed red pepper.
