For the Meatloaf:

2 pounds ground beef (80/20 recommended)

1 cup breadcrumbs

1/2 cup milk

2 large eggs

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried oregano

1 teaspoon smoked paprika

For the Glaze:

1/2 cup ketchup

2 tablespoons brown sugar

1 tablespoon apple cider vinegar

1 teaspoon mustard (Dijon or yellow)


Instructions

  1. Prepare the Meat Mixture: In a large mixing bowl, combine ground beef, breadcrumbs, milk, eggs, chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, oregano, and smoked paprika. Mix gently until just combined.
  2. Shape the Meatloaf: Lightly grease a loaf pan or line a baking sheet with parchment paper. Shape the meat mixture into a loaf and place it in the pan or on the sheet.
  3. Make the Glaze: In a small bowl, mix ketchup, brown sugar, apple cider vinegar, and mustard until smooth.
  4. Apply the Glaze: Spread half of the glaze evenly over the meatloaf. Reserve the other half for later.
  5. Bake the Meatloaf: Preheat the oven to 375°F (190°C) and bake for 45-50 minutes (loaf pan) or 40-45 minutes (baking sheet).
  6. Add More Glaze and Finish Baking: Remove the meatloaf from the oven, spread the remaining glaze on top, and bake for another 10-15 minutes, until the internal temperature reaches 160°F (71°C).
