Ingredients
For the Meatloaf:
2 pounds ground beef (80/20 recommended)
1 cup breadcrumbs
1/2 cup milk
2 large eggs
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon smoked paprika
For the Glaze:
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
1 teaspoon mustard (Dijon or yellow)
Instructions
- Prepare the Meat Mixture: In a large mixing bowl, combine ground beef, breadcrumbs, milk, eggs, chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, oregano, and smoked paprika. Mix gently until just combined.
- Shape the Meatloaf: Lightly grease a loaf pan or line a baking sheet with parchment paper. Shape the meat mixture into a loaf and place it in the pan or on the sheet.
- Make the Glaze: In a small bowl, mix ketchup, brown sugar, apple cider vinegar, and mustard until smooth.
- Apply the Glaze: Spread half of the glaze evenly over the meatloaf. Reserve the other half for later.
- Bake the Meatloaf: Preheat the oven to 375°F (190°C) and bake for 45-50 minutes (loaf pan) or 40-45 minutes (baking sheet).
- Add More Glaze and Finish Baking: Remove the meatloaf from the oven, spread the remaining glaze on top, and bake for another 10-15 minutes, until the internal temperature reaches 160°F (71°C).
- Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. Serve warm and enjoy!
