Ingredients

1 cup mascarpone cheese (room temperature)

1/2 cup powdered sugar

1/2 teaspoon vanilla extract

1 tablespoon espresso or strong coffee (cooled)

1/2 teaspoon cocoa powder (plus extra for dusting)

1/2 cup ladyfinger crumbs (or graham crackers)

8 oz semi-sweet or dark chocolate (for coating)

2 oz white chocolate (optional drizzle)

Mini chocolate chips (optional garnish)


Instructions

  1. In a bowl, combine mascarpone, powdered sugar, vanilla, espresso, and cocoa powder. Mix until smooth.
  2. Stir in the ladyfinger crumbs until mixture thickens. Refrigerate for 1 hour.
  3. Scoop and roll the chilled mixture into 1-inch balls. Place on a parchment-lined tray.
  4. Freeze the truffles for 15–20 minutes to firm up.
  5. Melt chocolate using a double boiler or microwave method.
  6. Dip each truffle into melted chocolate, tap off excess, and place back on tray.
  7. Optionally, drizzle with white chocolate and top with mini chocolate chips.
  8. Dust with cocoa powder before the coating fully sets. Chill until firm.
